“Gingerbread Cookies”
Ingredients
- 3/4 cup butter
- 1 cup white sugar
- 1 egg
- 1/4 cup molasses
- 2 cups flour
- 1 tablespoon ground ginger
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- decorating sugars, icing(recipe below) or candy
Procedure
- Cream the butter, sugar, egg and molasses with a mixer.
- In a separate bowl, stir together the flour, ginger, baking powder, cinnamon and salt.
- Add the dry ingredients to the bowl of wet ingredients and mix. The dough will be hard and hand mixing might be preferable.
- Roll out the dough with a rolling pin to a thickness of 1/8 inch.
- Use a cookie cutter to cut out gingerbread people shapes. Using Christmas trees and star shapes are fun as well.
- Alternatively, if time is short, the cookie dough can be hand-rolled into balls and slightly flattened with a fork.
- If you are decorating before baking, decorate as desired with colored sugar, bits of Christmas cherries or mini M&M's
- Bake in a 350 degree oven for 12 to 15 minutes
- Makes 20-24 cookies depending on shape and size
Cool cookies completely before decorating with icing. Icing can be used as glue for small candies or to mark the facial features and clothes.
